Chicken Black Bean Corn Chipotle Enchiladas
Ay Carumba - these enchiladas are delici-oh-so-good! Chicken, black beans, corn, and a little chipotle pepper for pizzazz and you have got a recipe for a fiesta. They will be packaged in a 9x13 pan.
Thaw in the refrigerator for 2 to 3 days or until completely thawed. Bake, covered with foil, in a 350 degree oven for 30 minutes. Uncover and bake for 20 to 25 minutes more of until the edges are bubbly and the center is heated through.
Serve with Mexican rice, sour cream, and salsa.
