Golden Ginger Fruit Pizza
We loved it, and we think our other taste-testers would have loved it too...if there would have been any left! It is a thick sugar cookie crust that you will bake at home, then top with your own homemade cream cheese frosting and orange glaze that you made in our kitchen, along with pineapple, peaches, and mandarin oranges. This is a light summer dessert! It will be packaged in a 9x13 pan.
Thaw in the refrigerator for 2 to 3 days or until completely thawed. Uncover and remove the bags from the baking pan. Bake the sugar cookie dough layer in a 350-degree oven for 20 to 25 minutes or until lightly golden. Cool completely. Spread the cream cheese mixture over the baked crust. For the glaze, empty the contents of the orange juice package into a small saucepan. Stir in 1/2 cup water (1/4 for splits). Cook and stir over a medium heat until thickened and bubbly. Cool completely. Spoon the cooled glaze evenly over the cream cheese mixture. Drain the fruit to remove any excess water. Arrange the fruit over the glaze. Cover and chill in the refrigerator for at least 1 hour before serving.
