Chicken and Veggie Orzo Skillet
This one-skillet meal will get dinner done fast on those busy August nights! Diced chicken, mushrooms, tomatoes, spinach and diced onions simmer with orzo pasta to make a complete meal.
Thaw in the refrigerator for 2 to 3 days or until completely thawed. In a large skillet, on medium-high heat, add the contents of the orzo bag. Cook and stir 6-8 minutes. Add the contents of the chicken/veggie bag, along with 3 cups of water (1.5 cups for a small). Reduce heat to low, cover and cook 10-12 minutes while stirring frequently. Add a small amount of water (or milk) to adjust consistency. Sprinkle top with Parmesan, turn off heat, and allow to set 3-5 minutes before serving.
Serve with a fresh summer salad.
