Cheesy Sausage Potato Breakfast Casserole
This hearty breakfast casserole is a super way to get your day off to the right start. Made up of shredded potatoes, cheddar cheese, sausage, green sweet pepper, and eggs. Thaw in the refrigerator for 2 to 3 days, or until completely thawed. Prior to baking, slowly pour the egg mixture over the potatoes. Cover with foil and bake in a 350-degree oven for 30 minutes. Uncover and bake another 30 to 45 minutes, or until almost set. Remove from the oven and let stand for 10 minutes before serving.
Serve with toast. Have leftovers? Roll it up in flour tortillas the next day for fast breakfast burritos!
